French quiche with baked vegetables

A hearty and healthy pie - you just want to eat it as soon as possible! The quiche pie turns out very tasty and tender. My husband called it “Women’s”, or “Dietary”, so he boldly ate it as a bite with meat :) but I really liked the pie on its own!

    Sift the flour with salt and quickly grind it with butter into crumbs; for convenience, the butter can be cut into small cubes.

    Add cold water and a few drops of lemon juice to the creamy crumbs and knead the dough. There is no need to knead the dough for a long time, the main thing is to bring everything together. Place the finished dough in a bag and put it in the refrigerator for 20-30 minutes.

    In the meantime, our vegetables are already ready, we place the peppers in a bag for 10 minutes so that they sweat.

    Afterwards we peel off the skin and do the same with the tomato. Chop the peeled peppers, tomatoes and mushrooms.

    Make the filling, lightly beat the eggs with a fork, add cream, salt and pepper, you can also crumble feta here, but I add it separately to the vegetables.

    Roll out the chilled dough (about 5 mm thick) and place it in the mold. We spread our filling on the dough in layers, sprinkle each layer with feta. Let's start with eggplants

Great recipe! Only I didn’t add cream to the filling, but added sour cream. Since there are a lot of vegetables, I decided that there would be too much liquid with cream.
