Soups first courses
In all cuisines of the world, special attention was paid to first courses. In many families, recipes for hot liquid dishes are passed down from mother to daughter. The proportions of ingredients, the sequence of adding them to the pan, the method of serving - soup recipes differ radically from each other. In Russian cuisine, pea and mushroom soups are popular, Ukrainian chefs masterfully prepare borscht with pampushki, in the Caucasus they know hundreds of ways to prepare kharcho and shurpa, hot gazpacho and cheese cream soups came to us from Italy. They are served cold or hot, with croutons, crackers, toast with butter, and slices of white bread. A pot of stew is enough for a whole family! The soups are cooked in fish, meat, bone and vegetable broth, with potatoes, pasta, rice, peas, buckwheat, beans, nettles and dozens of other ingredients added. Aromatic spices and seasonings give the liquid dish a special aroma; you can’t do without fresh herbs. It is served in a beautiful tureen, filling the plates right at the table.
