  1. STEP 1

    STEP 1

How to make classic okroshka on kvass with sausage? Prepare all the necessary products that are indicated on the list. Which sausage is best to use? Take any to your taste, it can be boiled sausage, half-smoked, sausages or sausages. The recipe used boiled sausage.

  2. STEP 2

    STEP 2

Wash the potatoes thoroughly with a brush to remove any remaining soil, sand, etc. Wash the eggs as well. Pre-boil the potatoes and eggs until tender, and then cool.

  3. STEP 3

    STEP 3

Peel the potatoes and shell the eggs. Wash the radish thoroughly, remove the places where the leaves and tail are attached.

  4. STEP 4

    STEP 4

Cut potatoes and eggs into small cubes. The finished okroshka will look very appetizing if all the components are cut into cubes of the same size. Sometimes I use a vegetable slicer to speed up the cutting process. Place the potatoes and eggs in a deep bowl or small saucepan.

  5. STEP 5

    STEP 5

Wash and dry the cucumbers. If the peel is bitter, it must be removed. Cut the cucumbers and radishes into cubes and add them to the potatoes and eggs.

  6. STEP 6

    STEP 6

Grind the sausage in the same way and add it to the rest of the products. If you prefer to replace sausages with meat, then use boiled beef, tongue or chicken breast. An important point is that boiled meat should not be fatty, since okroshka is a cold soup, pieces of fat will harden in it.

  7. STEP 7

    STEP 7

Chop the onion and dill as finely as possible. To make the okroshka more flavorful, the greens can be ground with a pestle and mortar. Add herbs to all ingredients.

  8. STEP 8

    STEP 8

    Mix all products well.

  9. STEP 9

    STEP 9

Distribute the resulting mixture portionwise into each person's plates and fill with kvass. Kvass can be used purchased or homemade. I like to add sour kvass to okroshka. If necessary, add salt to taste.

  10. STEP 10

    STEP 10

Add the required amount of sour cream, stir. Ready!

I love okroshka on hot summer days. I liked the recipe “classic okroshka on kvass with sausage.” I specially went to the market and bought everything on the list, since I still don’t have everything in my garden. I chose boiled doctor’s sausage, and bought kvass in barrel. I boiled the potatoes and eggs in advance. I tried to cut all the ingredients into equal cubes, as the author advises. I didn’t peel the cucumbers; they are hothouse and very tasty. Finely chopped homemade greens from the garden. It turned out to be a fairly large bowl of okroshka, but I didn’t fill it all up right away. Made 6 large servings. First we ate 3 servings, put the okroshka in tureens, seasoned with sour cream, poured cold kvass and salt. The rest of the okroshka is perfectly stored in a tightly closed container in the refrigerator. Preparing the dish is completely simple. The cold kvass soup turned out to be very satisfying, tasty, light, refreshing and cold. In the sultry heat it’s just right! The okroshka according to this recipe turned out incredibly tasty, everyone really liked it! Thank you!

Great recipe. Everything is accessible and simple. Non-intrusive tips on how best to cut vegetables. I just got a vegetable cutter and I tried cutting potatoes, eggs, cucumbers into the same small cubes, it turned out neat and beautiful. True, I grated the radishes on a coarse grater, I like it better that way. It turned out to be a delicious okroshka. Thanks again for the recipe.
