Pancakes without eggs
Lush, airy, amazingly tasty pancakes without eggs can be prepared in a minimum of time. The dough can be kneaded with or without yeast. If not, it is recommended to start experimenting with kefir, to which a little soda is added.
The decades-tested recipe for eggless pancakes is prepared with a minimum set of ingredients: kefir, soda, sugar, flour, vegetable oil. The proportions may vary, but usually a glass of liquid contains one hundred grams of flour and a tablespoon of butter. The rest is to taste: salt - a pinch, sugar - a spoon or two. Take a teaspoon of soda, and it must be quenched in kefir.
Instead of kefir, however, you can take any other milk of your choice: milk, cream, whey, yogurt, fermented baked milk, even plain water. True, in some cases it is recommended to use yeast, dry or fresh. Because soda may not cope with raising the dough and giving it airiness. Moreover, there are no eggs in our recipe.
Pancakes can be made both sweet and savory. And put different fillings into the dough: dried fruits, berries, fruits, nuts, mushrooms, cheese, vegetables, herbs, cottage cheese, jam. Instead of sugar, you can put honey or molasses, or any sweetener that is not afraid of heat treatment.
These pancakes are fried like any other, on both sides in a well-heated frying pan. If it has a non-stick coating, its surface does not need to be lubricated with oil. You can also bake eggless pancakes in the oven using suitable molds for cupcakes, muffins, and cookies.
