Our whole family loves zucchini pancakes, I constantly experiment and add something new to the dough. This recipe for lean zucchini pancakes uses oat milk. I just had it and made some for pancakes. At first it seemed that without eggs the dough would not be sticky enough. But on the contrary, it turned out to be very thick and viscous. It took me the same amount of flour. I added a little parsley for flavor. From this portion I got eight large pancakes. They retained their shape, but were not stiff. Good, juicy, soft) We dined on them with pleasure)
