STEP 1

STEP 2
Beat the egg into a bowl and add sugar and salt, mix with a whisk. There is no need to beat vigorously, just stir until the sugar and salt dissolve. Wash the egg first using food detergent to remove any dirt from it.

In the microwave or on the stove, slightly heat the kefir (until the first “gurgle”: the whey is visible, but so that it does not form flakes).

Gradually pour warm kefir into the egg mixture, stirring constantly.

Add flour into the liquid mixture in small portions (2 heaping tablespoons each) and whisk in one direction. So knead a thick, homogeneous dough. The dough should not slide freely from the spoon, but should slide lazily. If the dough is a little liquid, add flour, if it is very thick, add kefir, but very little to catch the desired consistency.

And only now, sift soda over the dough. Mix it thoroughly but quickly into the dough. STEP 9
Baking soda will make the dough lighter and a little thinner. It will be more convenient to pour this dough.

Let the dough stand for 10-15 minutes (until bubbles actively appear), so that the flour has time to disperse and the gas bubbles are evenly distributed in the dough. Do not stir the dough any more, carefully scoop it into the spoon from the edge.
STEP 11
Pour 3 tbsp into a well-heated frying pan. vegetable oil and heat it, reduce the heat to medium-medium. Dip a tablespoon into vegetable oil and, scooping up the dough, place it in the pan, helping with a teaspoon or a wet finger. Fry until golden brown on the bottom and holes appear on the top.
