Pancakes in general are perhaps the oldest, classic breakfast in Russian cuisine. Well, really, who among us hasn’t tried “those” pancakes at least once in our lives, even if they were prepared not by your own, but by a friend’s grandmother? And many of us are still puzzling over how she managed to put pancakes on the table so quickly and deliciously? It seems like she was just kneading the dough, and you came home and there was a whole pile of delicious fried circles waiting for you. And you gobble them up with sour cream or jam, washing everything down with scalding hot tea))
It has been practically proven that the most delicious pancakes are prepared with fermented milk products: sour milk, curdled milk, kefir. It is thanks to these ingredients that baked goods get that characteristic sour taste - which distinguishes pancakes from the same pancakes. And, of course, the real ones should be lush, airy, and tender. Some housewives prefer to use yeast, fresh or dry, for this. But even without yeast you can knead a good dough that will rise as needed in the pan.
In addition, it takes time to raise the yeast, and since we are preparing quick pancakes, we will only consider such options.
The easiest and fastest way to get airy dough is to knead it with kefir, soda and baking powder. If the recipe for quick pancakes contains such ingredients, you can take them without fear. These two powders do not interfere with each other. Although, of course, they can be added separately.
If the dough contains soda, it can be put directly into kefir or other fermented milk product. Thereby extinguishing it and getting rid of the unpleasant soda taste. In fact, the quenching process is needed for this purpose - to remove the taste of soda from baked goods. Baking powder has no such “disadvantages” - most often it is completely tasteless. Another advantage of yeast-free pancake dough is that it can be baked immediately when prepared. To make things go faster, you can immediately put the frying pan on the stove to heat up while the products are kneading. It will have time to heat up to the desired temperature when the dough is ready.
