STEP 1
How to make fluffy pancakes with sour kefir? Prepare all the necessary ingredients. Remove all products from the refrigerator in advance, as for best results they should be at room temperature.
STEP 2
Beat the eggs into a bowl, add salt and sugar. Beat the ingredients with a whisk or mixer until the mixture is homogeneous in consistency. Before using, wash the eggs under running water and soda, as there may be harmful bacteria on their surface.
STEP 3
Pour warm kefir into the bowl with the egg mixture. Stir.
STEP 4
Sift the wheat flour through a sieve, you can do this a couple of times to saturate the flour well with oxygen, which will allow you to make even more fluffy pancakes. Pour the wheat flour into a bowl of liquid and mix the mixture with a spoon, mixer or blender so that there are no lumps left. It is better to add flour in parts to monitor the condition of the dough; you may need less or more. Focus on the required dough consistency.
STEP 5
The dough should be a little thicker in consistency than sour cream. Add soda and mix the dough well. Leave it to stand on the table for 15 minutes. During this time, bubbles should appear on the surface of the dough, and the mass will increase slightly in volume. Meanwhile, heat the frying pan on the stove and pour in vegetable oil.
STEP 6
Pour the batter into the pan using a tablespoon. Fry the pancakes over medium heat. When they are browned on one side, turn them over and fry on the other side until golden brown. Then cover the frying pan with a lid and fry for a few more minutes so that the dough is well baked inside. If the frying pan has a non-stick coating, then you can add oil only the first time, and fry subsequent batches of pancakes without oil, this will allow you to prepare a less fatty delicacy for tea.
