Wash the liver, dry it with a paper towel to remove excess moisture, or simply place it in a sieve. Cut off all the veins and any excess.

We take a large onion or two small ones) The onion adds juiciness, don’t be afraid, you won’t overdo it. Peel the onion and cut into small pieces.

Now grinding. I suggest doing everything in a blender - it’s better to grind everything this way. If you don’t have one, you can use a meat grinder, but keep in mind that there will be large pieces. Place all prepared products in a blender and grind until smooth.

Pour our “dough” into a bowl, salt and pepper to taste. Add semolina and mix well. Leave for 20 minutes so that the semolina swells well. Some people add flour - for some reason I don’t really like it... But everyone has their own preferences. And one more thing about soda - I don’t add soda. I like the pancakes to be tender and soft. The quantity of ingredients has been checked - this is the best option. The dough is not very thick, but we like it that way - thin, delicate pancakes.

Pour vegetable oil into a frying pan, heat it up and spoon out the pancakes. The pancakes fry quickly. When you see that the edges have set and changed color, turn them over carefully. The articles at the end of this recipe will help you with choosing a frying pan and oil for frying.

Fry on the other side until done.
