I love potatoes in all varieties, and pancakes especially! And they are good with everything your heart desires) I always add greens and two eggs, but never flour! I squeeze out the grated potatoes and mix them with everything else. I carefully drain the water from the starch that has settled after squeezing and add it instead of flour.
