  1. STEP 1

    STEP 1

How to make potato pancakes with meat? First prepare the meat filling. How to make the filling? Peel the onion, divide it in half and chop one half in any way (knife, grater, blender). Add onion, salt and ground black pepper to the minced meat, knead it well. Cover a board or plate with cling film. Make 10 small cakes from the minced meat and place them on cling film. Place the cutlets prepared in this way in the refrigerator.

  2. STEP 2

    STEP 2

Prepare potato dough. Wash and peel the potatoes well. Using a fine grater, grate the potatoes and half the remaining onion. Transfer the grated mass into one deep container, add the egg, wheat flour and salt. Mix all ingredients thoroughly. You should get a fairly thick dough that does not spread, but holds its shape.

  3. STEP 3

    STEP 3

Pour vegetable oil into a frying pan and place it on the fire. When the pan is hot, use a tablespoon to spoon the potato mixture into pancakes.

  4. STEP 4

    STEP 4

Then immediately place the meat cutlets on top of the potatoes. Cover them with potato mixture, so the minced pork will be completely inside the potato pancakes. Fry the potato pancakes with meat over medium heat so that during frying the meat filling has time to fully cook and does not turn out raw.

  5. STEP 5

    STEP 5

Fry the pancakes until golden brown, then carefully turn them over and fry on the other side, also until golden brown. During the cooking process, potato pancakes can be turned over several times and fried until the desired color. Remove the finished pancakes from the pan onto a paper towel to absorb excess fat. In this way, prepare potato pancakes from all the dough. Serve the potato pancakes hot with sour cream. Bon appetit!

I made potato pancakes with meat for lunch, they came out fluffy and golden brown - very appetizing! I took minced pork for the potato pancakes, added half a finely grated onion, salt and pepper. She formed small cakes from the minced meat, put them in the refrigerator, and she started preparing the potato dough. For this, I grated potatoes - also on a fine grater, salted them, squeezed out the resulting juice, beat in one egg, added grated onion, salt, two tablespoons of flour and mixed everything thoroughly. I spooned the potato dough onto the frying pan, forming pancakes, put meat cakes on them and another layer of dough. Fry pancakes over medium heat on both sides until they are browned. It turned out great! The pancakes are covered with an appetizing crispy crust, the meat inside is soft and juicy. Very tasty! Thank you very much!

I made potato pancakes with meat. I used minced pork to make it more homogeneous and tender, and chopped the onion in a blender. I also didn’t grate the potatoes, but chopped them using a blender. After this, I placed the potato mixture in a metal sieve so that excess moisture was drained off first (when chopping with a blender, it turns out more than when grated), and only then added the egg, flour and spices. I fried potato pancakes in a thick-walled frying pan with the addition of vegetable oil. The pancakes turned out very tasty! Ruddy, with a crispy fried crust. And inside there is a tender potato mass and juicy minced meat. Thanks to the author for the recipe!

I am from Belarus myself. We call this dish “Sorcerers”. Very tasty and very nutritious. But I don’t recommend adding flour, because the potatoes themselves contain quite a lot of starch. I simply squeeze out the excess juice through several layers of cheesecloth.

Olga Mikhailovna, you are right, you can cook without flour. And my mother-in-law taught me this option for preparing potato pancakes - they have excellent taste!

I also simmer the finished potato pancakes for 3 minutes over low heat with a small amount of water.
