    How to make fluffy kefir pancakes, like grandma’s? First of all, we prepare the necessary products. Take kefir of any fat content of your choice. Wash the egg and dry with napkins.

    To prepare the dough for pancakes, take a large bowl and pour into it premium wheat flour, pre-sifted through a fine sieve. Add sugar, vanilla sugar and two heaped teaspoons of baking powder to the bowl with flour.

    Mix all dry ingredients together well in a bowl.

    Take a deep bowl and crack one chicken egg into it, then pour one third of a teaspoon of salt into it.

    Beat the egg well in a bowl with a whisk, breaking up the white strands.

    Pour room temperature kefir (I use 2.5%) into a bowl with a chicken egg and mix with a whisk.

    Add one tablespoon of vegetable oil to a common bowl and mix all the ingredients well with a whisk.

    Pour the prepared liquid base into a bowl with flour and mix all the ingredients together with a whisk. Please note that you may need more or less flour than I did. Focus on the consistency of the dough - it should be like thick sour cream.

    We continue to thoroughly whisk all the ingredients in the bowl until a homogeneous dough of the required consistency is obtained, which is then allowed to stand for fifteen minutes.

    Place a frying pan, preferably with a thick bottom, on the stove and pour five to six tablespoons of vegetable oil into it, which you then heat by turning on the stove over medium heat.

    Place one tablespoon of prepared dough into the frying pan, pre-wetting the spoon in vegetable oil and fry the formed pancakes until golden brown on each side.
