    Break the egg into a bowl, add sugar to it. Beat the egg and sugar with a mixer into a thick foam.

    Sift the flour with salt and baking powder, then add it to the egg mixture.

    Mix the dough with a whisk. It should be medium thick, like low-fat sour cream.

    Add grated carrots to the dough and stir until smooth. It is more convenient to do this with a spoon rather than a whisk. If you see that the dough is too thick, add a tablespoon of sour cream to it.

    Heat vegetable oil in a frying pan over medium heat. Spoon carrot batter into pancakes. Fry them like regular pancakes until golden brown on both sides. I used to fry carrot pancakes for my husband during Lent. But I didn’t cook sweet pancakes. I just bought some sweet autumn carrots and decided to try the recipe. Moreover, preparing such pancakes is as easy as shelling pears) I also grated the carrots on a medium grater. I didn’t beat the egg, I just kneaded the dough with a fork and added grated carrots. I fried it like regular pancakes. Everything in this recipe is well balanced. The flour was just right, and the pancakes remained soft and juicy after cooling. After frying, I placed them on a paper towel to absorb excess fat. They were cooked well, there was nothing raw. I note that carrots burn quickly in a frying pan, so I fried them over low heat and did not leave the stove) The pancakes turned out tender, bright, sweet and aromatic. The carrots themselves also add sweetness. My daughter liked it too, she ate it with sour cream. I recommend these carrot pancakes to both adults and children!

These are the pancakes I got. I cook them often because they are very tasty. I take one quantity of food, this is just enough for four pancakes, that’s how much I can fit in the frying pan.
