    Begin pouring the egg mixture into the flour in portions, stirring constantly with a fork or whisk. Thanks to this method (pour the liquid component into the dry one), the dough will be more homogeneous. The consistency should be quite thick, like sour cream.

    Put out the soda. How to extinguish soda? Pour it into a small container and pour in the same amount of table vinegar (9%) or lemon juice. The reaction will begin immediately - the mass will bubble. As a result, carbon dioxide will be released, which will raise the dough during baking. The soda in this recipe is quenched because it contains only water; if the pancakes were made with kefir, it would be quenched by the acid contained in the fermented milk drink.

I made pancakes in water with eggs. I followed the recipe and quenched the baking soda with lemon juice. I and my family liked the result. The pancakes turned out fluffy and delicious.
