STEP 1

How to make fluffy lean pancakes on water without yeast? Prepare all the necessary ingredients. Use premium flour. Preheat the water until warm. It should not be too hot, otherwise the flour will boil and the dough will not turn out airy.
STEP 2

STEP 3

Pour in lemon juice and mix again. You can replace lemon juice with a pinch of citric acid dissolved in 1 tbsp. l. water. If citric acid is not available, regular apple cider vinegar will do. You need 1 tsp.
STEP 4

Sift the flour along with soda and salt directly into a bowl with warm water and sugar. Quickly stir the dough with a whisk, breaking up all the flour lumps. There is no need to stir for too long. Once all the flour is completely soaked, let the dough rest for 5 minutes.
STEP 5

If the dough is mixed correctly, small bubbles will appear in it. This means that an acid-base reaction occurred between lemon juice and soda, releasing carbon dioxide into the dough. Thanks to this reaction, the dough will become airy and the pancakes will become fluffy during baking. STEP 6

Spoon the dough and form small round pancakes, leaving a little space between them so that they do not join together during baking. Fry the pancakes on both sides over medium heat until golden brown. As they are ready, they will become fluffy and airy.
