STEP 1
How to make fluffy zucchini pancakes in a frying pan? Prepare your food. What kind of zucchini works best? Choose young fruits with delicate skin and small seeds. The amount of flour may differ from that stated in the recipe, it will depend on the juiciness of the zucchini.
STEP 2
Wash the zucchini, cut off the ends and peel. It is convenient to do this with a vegetable peeler; then a very thin layer will be removed. It is not necessary to cut off very thin skin. If using more mature squash, trim off the rough skin and scoop out the seeded center.
STEP 3
Grate the zucchini on a medium grater. Or on a large one, in which case the pancakes will turn out more textured.
STEP 4
Using your hands, squeeze the juice out of the zucchini mass. Drain it into a separate bowl, but do not pour it out, the juice may be useful later.
STEP 5
Beat the eggs into the zucchini, add some flour and salt. Stir. Then add flour in parts, stirring the mixture each time.
STEP 6
The dough should be as thick as pancakes. If it turns out too thick, then dilute it with the reserved juice. You can also add your favorite spices, garlic and herbs to taste.
STEP 7
Heat a heavy-bottomed frying pan over high heat. Pour some vegetable oil on it. Spoon the dough into the pan, forming small pancakes.
STEP 8
Fry them over medium heat until golden brown on one side, then turn over and fry on the other. Remove the finished pancakes from the pan. Fry pancakes from all the dough in this way.
STEP 9
Serve the pancakes immediately; sour cream goes well with them. Bon appetit!
