STEP 1

How to make delicious pancakes with kefir if you don’t have yeast or eggs in the house. To begin, prepare the necessary ingredients according to the list. Take premium flour. Kefir - the fattier it is, the tastier the pancakes will be. In addition to sugar, you can add a pinch of vanillin or vanilla sugar. But it is advisable not to add any more sugar, otherwise the pancakes will burn in the pan.
STEP 2

Pour room temperature kefir into a saucepan and heat slightly until the whey separates. How can you tell whether the whey has separated or not? When stirring, small white flakes will be visible on the spoon. As soon as they appear, you can remove the kefir from the heat.
STEP 3

Pour the warm kefir into a bowl. Due to the fact that after adding soda, the mass increases in volume by 2-3 times, the dishes must be selected taking this into account. Add salt and sugar and mix.
STEP 4

Pour soda into kefir and stir. The kefir will begin to foam strongly and air bubbles will appear.
STEP 5

Immediately add the flour sifted through a sieve in parts, stirring the dough each time until smooth. The dough must be kneaded quickly until the reaction of soda with kefir is complete.
STEP 6

The consistency of the finished dough should be like thick sour cream. Therefore, focus primarily on the consistency of the dough and, if necessary, add a little more flour. Or, on the contrary, you may need less flour than in the recipe. It depends on the moisture content of kefir and the quality of the flour itself.
STEP 7

Heat vegetable oil in a frying pan over low heat. Spoon out the dough, forming pancakes and leaving a little space between them. Fry the pancakes on both sides over low heat until golden brown. As they are ready, they will become fluffy and airy.
STEP 8

Transfer the finished pancakes to a plate and serve. Bon appetit!
