You can make the dough for cottage cheese pancakes in a frying pan in a matter of minutes. In most cases, it does not require proofing: as soon as it is ready, you can immediately fry it. Products for it can be very different, from different types of flour to the addition of butter. Some cook with semolina, others without it
The simplest recipe for cheesecakes for frying in a frying pan has the following composition: cottage cheese, flour, eggs, sugar, salt. The mass is kneaded until smooth. It is then formed into balls, which then need to be flattened into thick “coins”. The thickness of cheesecakes can vary from very thin, 1 cm, to impressive, 1.5-2 cm. During heat treatment, the dough can double in size. This is especially facilitated by the addition of baking soda or baking powder.
It is worth keeping in mind that there is no need to beat eggs for cheesecakes either with a whisk or a mixer. Rather, they are placed to bind other products. And for splendor, soda is used.
There are recipes that add milk, sour cream, and mineral water. Moreover, milk can be not only cow’s milk, but also goat’s, almond, soy, and coconut milk. The same applies to flour: wheat, rice, oatmeal, corn, and so on.
To ensure that the baked goods are ready, you can cover the pan with a lid. Then the cheesecakes will grow, become fluffier and softer. It is also important to place them on a preheated surface, with or without oil. They fry quite quickly, so it’s important to watch so they don’t burn.
It is believed that classic cottage cheese pancakes should be cooked in a frying pan with melted butter.
A little secret: this dish can be brought to the desired state as follows. When the cheesecakes (or cottage cheese) are fried on both sides, reduce the heat, cover with a lid and leave for a minute or two. If the frying pan has a thick bottom, you can turn off the heat altogether, leaving the finished products to simmer in the warmth.
You can serve them with any sweet sauce, sour cream, syrup, jam, marmalade, fresh fruit, berries, yogurt.
