    Prepare the necessary ingredients for the cheesecakes. It is better to take the cottage cheese slightly moist, not lumpy. Fat content doesn't really matter. Cottage cheese in briquettes is ideal - it is quite soft, moderately moist, without grains. If your cottage cheese is dry and lumpy, beat it with an immersion blender or rub through a sieve. Use premium flour.

    You can take either fresh summer cherries or frozen ones, in which case delicious cheesecakes with filling are available all year round. If the cherries are fresh, wash them, dry them and remove the stems and pits. Place the cherries on a paper napkin to absorb excess juice. If the cherries are frozen, first defrost them and also place the berries on a napkin. The net weight of pitted cherries should be about 50 g, so take berries with a reserve.

    In a bowl, combine cottage cheese, egg, sugar, vanillin and salt. Mix everything thoroughly. The mass will be quite liquid.

    Add flour, leaving 2 tbsp. l. for breading cheesecakes. Knead a plastic sticky dough. You may need more or less flour, depending on the moisture content of the cottage cheese and the overall moisture content of the resulting mass.

    Using wet hands, divide the dough into 8-9 equal-sized balls.

    Roll each piece of dough into a round cake. Place 3-4 cherries on the dough. If the dough sticks too much to your hands, either wet your hands with water, or, on the contrary, dust them with flour.

    Bring the edges of the dough together and form small round cheesecakes.

    Heat a little vegetable oil in a frying pan over medium heat. Place the cheesecakes and fry for 3-4 minutes on each side until golden brown.

What a delicious breakfast I had today! The cheesecakes turned out quite fluffy, they look beautiful and very appetizing. Whole cherries inside add aroma, juiciness and pleasant sourness to the taste. You can serve cheesecakes with sour cream, honey, syrup, but I ate it with ice cream, I recommend it.
