STEP 1
How to make king pie with cottage cheese? Prepare the necessary ingredients. Take frozen butter. I used premium wheat flour, it is best suited for making sweet and savory pastries.
STEP 2
Sift the flour through a sieve into a convenient wide container, add sugar, salt, baking powder, and mix. Please note that you may need more or less flour than I did. Therefore, focus on the consistency of the dough.
STEP 3
Quickly grate the frozen butter on a coarse grater so that it does not have time to get too warm from your hands.
STEP 4
Add the dry ingredient mixture to the grated butter.
STEP 5
Grind everything until you get sandy crumbs. It should be quite crumbly. Important: this must be done very quickly so that the butter does not melt from the heat of your hands. If the shortbread dough is kneaded for a long time, the butter melts, and the dough becomes drawn out and hard, then the crumb will be hard after baking. After quickly grinding the dough, put the pan with shortbread crumbs in the refrigerator.
STEP 6
Meanwhile, prepare the pie filling. You can take cottage cheese of any fat content. The higher the fat content, the more tender the filling will be. It is convenient to use pasty, smooth cottage cheese. If the cottage cheese is grainy, grind it in a blender.
STEP 7
If the capacity of the blender does not allow you to grind all the cottage cheese at once, pour in most of it first. Add eggs, sugar, vanilla sugar and beat.
STEP 8
The content volume will be reduced. Add the rest of the cottage cheese.
STEP 9
Grind everything to a homogeneous creamy consistency. Thanks to this, the filling will be very tender.
STEP 10
Grease the bottom and sides of the baking dish with vegetable oil. I used a springform pan with a diameter of 22 cm, the bottom of which was covered with parchment. Place half of the cooled shortbread crumbs into the pan. Press it with your hands, evenly distributing it over the bottom of the mold, and at the same time form sides along the edges. Sand crumbs mold well.
STEP 11
Place the curd filling on the sand base and smooth it out.
STEP 12
Sprinkle the remaining shortbread crumbs on top so that they evenly and completely cover the curd filling. Gently smooth the surface of the pie.
STEP 13
Bake the pie in an oven preheated to 180C for about 40 minutes until the top is golden brown. The baking time may not coincide with the specified time, as it depends on the operating characteristics of the oven.
STEP 14
Cool the finished pie, cut into pieces and serve. Bon appetit!
