Onion pie with onions
The main thing in making onion pie is the filling. In the classic version, it makes up the majority of baked goods. The French bake pies in the form of baskets, the inside of which is filled with filling. With the addition of cream and/or butter, it always remains juicy and forms an unusually tasty combination with shortbread.
If you cook according to the classics, then the onion is cut into half rings and fried in butter until it becomes transparent. Add various spices and salt. Separately, beat eggs with cream. Then mix with cooled onions. The filling is ready. The basket for it is baked until half cooked with the addition of washed and dried beans (so that the bottom does not rise). And then they bake it with onion filling.
Russian housewives often replace cream with milk, sour cream, and cheese. And butter is vegetable oil.
If you don’t like the French presentation of the dish, you can make the pie your own way, using different types of dough: shortbread, puff pastry, yeast, and so on. It is advisable not to make the dough liquid, since the filling itself is wet. Well, besides onions and eggs, you can use other vegetables: carrots, zucchini, potatoes, pumpkin. The main thing is that the onion content in the pie is high. Usually a little less than a kilogram is required - 800-900 g.
