    Let's prepare the ingredients for the pie. The composition of the ingredients is quite simple: Armenian lavash, chicken eggs, cheese, milk, herbs and spices. Cheese, both hard and soft, is suitable for this pie. You can also use any greens to taste and availability: dill, green onions, sorrel, parsley, cilantro and others, or a little of everything.

    Beat chicken eggs into a bowl, add a pinch of salt and ground black pepper, beat with a fork until the mixture is homogeneous in consistency. Salts need to be added depending on the type of cheese; if the cheese is salty, such as feta cheese, then you need very little salt so as not to oversalt the pie.

    Wash fresh dill and parsley thoroughly, dry on a paper towel and cut with a knife. You can use frozen greens after thawing them. Wash the green onions, dry them and chop them finely. Add the cooked herbs to the bowl with the milk-egg mixture. Mix.

    Grate hard cheese on a coarse or medium grater; if the cheese is soft, you can simply mash it with a fork. Place the chopped hard cheese in a bowl. Mix again. Tear the lavash with your hands into small pieces. Place the lavash pieces in a bowl with the prepared mixture. Mix thoroughly so that the pita bread is completely immersed in the liquid. It is important that the pita bread is not dry; if necessary, reduce the amount of pita bread or, conversely, add more liquid.

    Leave the dough for 20 minutes so that the pita bread is well saturated with moisture and swells, and the dough becomes thick. Baking form: grease the bottom and walls with butter, you can sprinkle with semolina or flour, or cover with parchment. Spoon the dough into the mold. Preheat the oven to 180 degrees. We put the pie in the oven to bake for 30 minutes, but you need to focus on the operation of the oven, the size of the pie and the amount of ingredients.

    The pie should rise slightly and brown on top. As soon as the pie is ready, remove the pie pan from the oven, let it cool slightly, place it on a plate and serve with tea, coffee or cocoa. Makes a very satisfying breakfast, a between-meal snack, or a light protein dinner. Bon appetit!

I’ve already heard about torn lavash pie, but I haven’t cooked it. I had no idea how delicious it is! I cut the pita bread with scissors, it seems to me that it’s more convenient. I wanted to add processed cheese, so I also grated it on a coarse grater. I took a little more pita bread and the mass turned out a little dry, so I added more milk. The cake turned out wonderful, layered and soft. The taste is somewhat reminiscent of achma. Cheese and pita bread go well together, and green onions and aromatic parsley add freshness to the pie. Yesterday I made such a pie, I really liked it, I took Suluguni cheese, about 270 grams and added 50 ml of milk, since the mass turned out to be very dry due to the increase in the amount of cheese. Thanks for the recipe, I will try to make it with another cheese

I made a pie and added cottage cheese to the cheese. It turned out very tasty. I made different versions of the “banniitsa type” with lavash. This one is the most successful. With torn lavash it turns out tastier than when the lavash is layered or rolled. Thank you very much for the recipe!
