STEP 1

How to make a kefir pie in a frying pan? Measure out the required ingredients for the dough. Remove the kefir from the refrigerator in advance so that it is at room temperature. Melt the butter first in a microwave oven or in a water bath and cool slightly.
STEP 2

In a bowl, beat the egg and salt until smooth.
STEP 3

Pour in cold kefir and stir.
STEP 4

Add melted butter, stir.
STEP 5

Sift flour mixed with baking powder into the dough. Thanks to sifting, the flour will be saturated with oxygen, and the finished cake will be more tender and airy. Add flour in parts; you may need less. Stir the dough first with a spoon, then knead with your hands. If necessary, add more flour, but add little by little.
STEP 6

The dough turns out soft, slightly sticky. I advise you not to make the dough too hard so that after baking it will be softer. Cover the dough with a towel.
STEP 7

Prepare the necessary ingredients for the filling. Any canned fish is suitable: sardine, salmon, iwasi, both natural and in oil. I have natural saury.

Boil pre-peeled potatoes in salted water until tender. Cool the potatoes. You can do this in advance. Grate the boiled potatoes on a coarse grater.

Wash the green onions, dry them, and chop them finely.
STEP 10

The dough has “rested” and become more elastic. Divide the dough into 2 parts.

Lightly dust the table with flour. Roll out one part of the dough into a round layer slightly larger than the diameter of the frying pan.

Grease the bottom and sides of the pan with vegetable oil. Spread the dough over the bottom of the pan and form sides. My top diameter of the pan is 20 cm.

Place a layer of grated potatoes on the dough.

Sprinkle the potatoes with green onions.
STEP 15

Break the fish into pieces and place on top. You can add a little liquid from the can to make the filling more juicy.
STEP 16

Roll out the second part of the dough and place it on the filling. Bring the edges of the dough together well.
STEP 17

Bake the pie over moderate heat, slightly covering it with a lid. Use a spatula to check the brownness of the sides of the pie. The dough should be golden brown on both the bottom and sides. Adjust the heating, taking into account the characteristics of your stove. If the cake browns too quickly and too much, turn down the heat.
STEP 18

Turn the pie over using a suitable sized plate. Place a plate over the top of the pie and turn it over. Grease the pan with vegetable oil and place the pie with the browned side up. I turned the pie over using a larger frying pan and finished baking it on it, since the upper diameter of my pie is larger than the bottom. Cook the pie also until golden brown over moderate heat, covered.

Transfer the finished pie to a plate and serve warm, cutting into pieces. Bon appetit!
