Laurent pie with chicken and mushrooms

STEP 1

How to make a pie? Prepare the following ingredients. Our pie is shortbread, so the food can remain cold. Thaw the chicken fillet in advance.
STEP 2

Cut cold butter (from the refrigerator) into squares. Place in a deep bowl in which the dough will be kneaded.
STEP 3

Add one raw egg to the butter, pour in cold water and add the sifted flour. Mix everything thoroughly, kneading the butter. You can do this with a fork.
STEP 4

Knead the dough. It should not stick to your hands. Gather the prepared dough into a ball, wrap in film and place in the refrigerator for 30 minutes.
STEP 5

For the filling, peel fresh champignons (can be frozen), rinse, drain and cut into small cubes or slices.
STEP 6

Rinse the chicken breast fillet under water, dry with a paper towel and also cut into small pieces. Chop the peeled onion (half).
STEP 7

Grate the cheese on a medium grater. Any cheese or even a mixture of cheeses - soft and hard - will do.
STEP 8

Fry chopped mushrooms, chicken fillet and half a chopped onion in oil in a frying pan.
STEP 9

Lightly grease the pie pan and spread the chilled dough evenly over the bottom and sides of the pan.
STEP 10

Place fried mushrooms and meat on the dough.
STEP 11

To fill, mix eggs and cream in a deep bowl. Add grated cheese.
STEP 12

Pour the egg-cream and cheese mixture evenly over the pie.
STEP 13

I make this kind of pie often, so for variety I put fried slices of mushrooms on top. This step is optional.
STEP 14

Bake the pie for 30-40 minutes in a preheated oven at 200 degrees. oven. It is preferable to serve it warm.
