    Pour salt, ground pepper, ground bay leaf into a bowl. Everything is to taste, you can not add something at all or add and complement it yourself, but the main thing is to maintain a balance - don’t overdo it! Mayonnaise and apples will also add their own flavor to the duck.

    Rub the duck well with spices inside and out. Place in the refrigerator for a couple of hours. If desired, add pieces of garlic under the skin, making slits. I prefer duck without garlic.

    Before removing the duck from the refrigerator, turn on the oven at 180 degrees so that it has time to heat up, cut the apples into quarters, removing the core. There is no need to sprinkle with lemon, they are already sour, their taste is enough for a duck.

Moreover, the duck takes a long time to bake and there will be a crust in any case) Inside, I stuffed the carcass with apple slices, and when I was about to put it in the oven, I decided to put mugs of tangerines and chopped pineapple stems left over from another dish on the sides. So I had a bit of an experiment) My duck was homemade, not particularly pampered, I baked it for two hours, then I removed the foil, turned the carcass over and baked for another half an hour until golden brown. In the end, the duck meat turned out soft, this is the most important thing) And it is also aromatic, tangerine also took part in this) The taste of duck meat is specific, a little tart, and I like it. The crust turned out golden brown and not at all greasy. Separately, I want to say about apples. I haven’t tried apples soaked in duck meat juices yet, I liked it, the slices looked like meat) And the duck, soaked in apple juice, became more tender and more aromatic. The recipe is successful, I recommend it.
