The bird, covered with a golden crust, looks appetizing and invites you to taste the juicy breast or leg. Duck is slightly tough and difficult to cut into pieces raw. The whole carcass is baked, and after cooking it is divided into parts. In different cuisines of the world there are sometimes quite unusual recipes for duck in the oven. Its belly is stuffed with apples, oranges, buckwheat or rice mixed with dried fruits. The poultry meat is pre-marinated in red wine, lemon juice and honey to make it softer and covered with an attractive golden brown crust. After cooking, the aromatic filling is placed on a dish and serves as an excellent side dish for duck. Before baking, the carcass should be carefully plucked, washed and dried. Do not forget to cut out the tail - it contains glands, from which during cooking an unpleasant odor emanates that can ruin the entire dish. Use spices and aromatic herbs generously so that the specific taste of duck disappears and the dish turns out to be tender in taste.
