Wild duck in the oven

STEP 1

How to bake wild duck in the oven? Prepare all the ingredients for the dish.
STEP 2

For the marinade, place soy sauce, mustard and 2 tbsp in one bowl. orange juice. Add salt and pepper.
STEP 3

Mix everything well.
STEP 4

Pluck the ducks, singe them, wash and dry them.
STEP 5

Coat generously with marinade. Rub additional salt inside. Place the ducks in a bag, in the refrigerator and leave for 12 hours.

One duck will be stuffed, the other will not. For minced meat, coarsely chop a green apple or quince and one orange.
STEP 7

Stuff the duck and place it in an ovenproof dish (with lid), back side down.
STEP 8

Place the second duck in the pan as is, back up.
STEP 9

Cover the ducks and place in the oven. Cook at 200 degrees for 1 hour. If you have ceramic molds, place them in a cold oven to prevent them from cracking.

Combine honey with remaining orange juice.
STEP 11

Mix well.
STEP 12

Remove the duck without minced meat from the oven.
STEP 13

Turn over, cover with lid and return to place. Cook for another 45 minutes.
STEP 14

After 45 minutes, remove both ducks. Drain juice and fat from both pans.
STEP 15

Coat the duck without stuffing with honey-orange sauce.
STEP 16

Coat the duck with the filling with the frying juice. Return the ducks, uncovered, to the oven for 5 minutes. Then take it out and coat it again. Repeat this 3-4 times.
STEP 17

Serve the finished ducks and treat them to your family. There is no need to call them - they came running to the scent a long time ago.
