Whole baked duck in onion and citrus sauce

What could be better than tradition? Only a delicious tradition, roast duck. Although the New Year is still very far away, I think such a culinary recipe should be a must for New Year’s Eve. I spotted it from the wonderful chef A. Seleznev - New Year's duck with oranges.

It took 2.5 hours to prepare (30 minutes prep, 2 hours baking). The temperature had to be increased because... at the specified temperature the bird remained completely pale and raw. Perhaps due to the fact that the oven was opened every 15 minutes...

I'll add this recipe to my cookbook! I’ve long wanted to try to cook duck with oranges, but somehow I either didn’t get around to it or there wasn’t any duck))) And then just in time for the New Year we saved myself a duck) Thank you very much for the detailed description and step-by-step photos. I really think that 150 -160 degrees for baking will be a little too little, at least for my oven... I think up to 200 will be needed! I also use pasta with liver and egg as a filling. It turns out delicious too

Silva, that duck must have been juicy? I like this set of products! I’ll just replace the vinegar with lemon juice, and I won’t add carrots (they’re not recommended for separate meals if they’re not fresh), I’ll do the rest according to the recipe. Last year I baked a goose in orange juice, the sauce itself is very good, soaks the game meat and gives a cheerful boost of energy!
