Roasted duck with apples, cinnamon, honey and mustard

Step-by-step preparation
STEP 1
We wash the duck carcass and dry it with a paper towel.
STEP 2
Rub the duck with salt and pepper.
STEP 3
Then brush the duck carcass with honey and mustard sauce. Place the duck in the refrigerator for several hours (from 1 to 8 hours) to soak in the sauce. After the time has passed, place 3-4 apples inside (I prefer sour “Antonovka”), cinnamon (ground), bay leaf and nutmeg.
STEP 4
Place the prepared carcass in a baking dish, sprinkle with lemon juice and cut with a knife in several places. Place the form with the duck in the oven, preheated to 220 degrees, bake for an hour. Periodically pour the rendered fat over the duck.
STEP 5
To prevent the duck from burning on top, cover it with foil. You can completely wrap the carcass in foil, then the duck will bake inside itself, there is no need to water it. After the time has passed, reduce the oven heat to 160 degrees, put the remaining apples in the pan, pour in duck fat, and bake for another 20 minutes. The duck with apples is ready, Bon appetit!
