Yeast pie with cabbage and meat

STEP 1

How to make a yeast pie with meat and cabbage? Measure out the required ingredients for the dough. Milk of any fat content is suitable, it just needs to be warmed up a little.
STEP 2

Sift the flour into a wide bowl with high sides. This must be done so that the flour is enriched with oxygen. As a result, the dough will rise easily and become airy. And the finished baked goods will turn out fluffy.

Activate the yeast. To make this process faster and more efficient, slightly warm the water. In a small bowl, dissolve yeast and 1 tsp in water. sugar, mix well. Leave the mixture for 10-12 minutes until a “cap” forms on the surface.

To prepare the dough, take a large container, keeping in mind that the dough will increase in volume. Beat the egg with the remaining sugar and salt until smooth.

Pour in warm milk, stir lightly.
STEP 6

Add activated yeast, stir.
STEP 7

Pour in vegetable oil, stir again.
STEP 8

Add most of the sifted flour. Do not pour out all the flour at once so that the dough does not turn out tight. It may require less (or more) of the specified amount.

Stir with a spoon first. Add the remaining flour in small portions, while mixing the dough with your hands and observing its consistency.
STEP 10

The dough turns out soft, tender, pliable, and does not stick to your hands. Cover the dough with a towel from airing and leave it in a warm place to rise.

While the dough is rising, prepare the pie filling. You can use any minced meat: pork, beef or mixed.

Cut the pre-peeled onions into small cubes.
STEP 13

Heat vegetable oil in a frying pan. Fry the onions over moderate heat, stirring occasionally, until golden brown.
STEP 14

Place the minced meat in the pan. Fry the minced meat with onions, stirring often and kneading the meat lumps. Salt the minced meat; if desired, you can add any spices to taste. Cook the minced meat until it changes color, it should become dark.

Wash the cabbage and remove the outer rough leaves. Chop the cabbage into thin strips.

Fry the cabbage in a frying pan with the addition of vegetable oil until cooked. Don't forget to stir so that the cabbage cooks evenly. If necessary, add a couple of tablespoons of warm water. Salt the cabbage while cooking.

Combine the fried minced meat with cabbage and stir. Cool the filling well.

After 80-90 minutes, the dough will increase in volume by 2-2.5 times.

Gently knead the dough and place it on a table sprinkled with flour. Divide the dough into parts: larger ones for the bottom of the pie, smaller ones for the top. And I left some dough for decoration.

Roll out most of the dough on a floured table into a round layer larger than the diameter of the mold so that you can make sides.
STEP 21

Cover the bottom of the pan with parchment and grease the sides with vegetable oil so that the finished cake can be easily removed. My mold diameter is 22 cm. Place the rolled dough into the mold, spread it over the bottom, and form the sides.

Spread the filling evenly over the dough.

Roll out the second part of the dough in the same way as the first, place it on top, covering the filling. Bring the edges of the dough together well. Be sure to make a hole in the center of the pie to allow steam to escape so that the pie is well baked.

Cut out any shapes from the remaining dough and decorate the top of the pie.
STEP 25

In a bowl, beat the yolk with milk until smooth.
STEP 26

Using a pastry brush, brush the top of the pie with the yolk mixture.
STEP 27

Bake the pie in an oven preheated to 180C for 30-35 minutes until golden brown. If the pie browns prematurely, cover the top with a layer of foil. Determine the baking duration based on the operating characteristics of your oven. Cool the finished pie slightly in the pan, then remove.
