Fish pie in the oven made from yeast dough

STEP 1

How to bake a fish pie in the oven? Measure out the required ingredients for the yeast dough. Warm the milk slightly.
STEP 2

Melt the butter over low heat, cool until warm.
STEP 3

Sift the flour through a sieve to enrich it with oxygen. Then the dough will rise well and easily and the baked goods will turn out fluffy.
STEP 4

In a small bowl, combine the yeast, 0.5 tsp. sugar and about 50 ml of warm milk. Mix everything well and leave for 10 minutes to activate the yeast. A foam “cap” will appear on the surface.

In a wide, stable container, whisk the eggs with salt and the remaining (1.5 tsp) sugar until smooth.

Pour in the remaining warm milk and stir.
STEP 7

Add activated yeast mixture and stir lightly.
STEP 8

Add melted, non-hot butter, stir.
STEP 9

Add about 3/4 of the sifted flour, mix first with a spoon. Do not pour out all the flour at once so that the dough does not turn out too dense. You may need more or less flour depending on its properties and quality.

Add the rest of the flour in small portions, while mixing the dough with your hands and controlling its consistency.
STEP 11

Knead into a soft, pliable dough. Cover the bowl with the dough with cling film or a towel and leave for 70-80 minutes in a warm place to rise.

Prepare the pie filling. You can take any fish fillet, both red and white. Choose seasonings and spices to taste.

Wash the fish fillet and dry well. Cut the fillet into small pieces.
STEP 14

Cut the pre-peeled onions into thin half rings.
STEP 15

Combine fish fillet with onion. Salt, add coriander (or any spices and seasonings to taste). Stir.

The dough has risen well. It increased in volume approximately 2.5 times. Rising time will depend on ambient temperature and yeast activity.

Gently knead the dough and place it on a table sprinkled with flour. To form a fish-shaped pie, roll out the dough into an oval layer 0.5-1 cm thick. It was more convenient for me to transfer the workpiece to parchment at this stage, so as not to disturb the formed pie later.

Place the prepared filling in the shape of an oval slide in the middle of the layer.

To make the filling more juicy and tasty, place pieces of butter on it.
STEP 20

On both sides of the filling, make oblique cuts along the length of the filling.
STEP 21

Fold the leading edge of the dough over each other to form the head of the fish.
STEP 22

Wrap the cut side strips of dough one by one over the filling, overlapping them and lightly pressing them from the sides.
STEP 23

Thus, wrap all the strips of dough. The filling should be completely closed by them.
STEP 24

Form a tail from the bottom of the layer. To do this, fold the sides of the dough over each other and press lightly. I cut the tail into 2 parts and made strips with a knife.

A fish eye can be made from an olive ring. Cover the formed cake with a light towel and leave to proof for 15 minutes.

In a bowl, mix the yolk and a spoonful of milk.
STEP 27

Brush the top of the fish pie with yolk so that it gets a nice golden brown color during baking.
STEP 28

Bake the pie in an oven preheated to 180C for 30-35 minutes. Baking time will depend on the thickness of the filling layer, as well as on the individual operating characteristics of a particular oven. If the top of the pie browns prematurely, cover it with foil.

Serve the fish pie warm. Bon appetit!
