For the filling, choose the thickest jam so that it does not leak out during baking. Yeast can be dried or pressed. We take the ratio of dry to pressed 1:3. Heat the milk until warm.

    Dissolve yeast in warm milk. The milk should be approximately 36-42 degrees. In a hot environment, the yeast will die. Add sugar, salt and a little flour. Leave to stand for about 20 minutes. During this time, the yeast will begin to work and bubbles will appear in the dough.

    Add melted (but not hot) butter to the bowl. Break the eggs. Mix everything with a whisk.

    Gradually add sifted flour into the bowl and knead the dough. At first it is convenient to knead with a whisk. When the dough becomes thicker, you can use a wooden spatula. Knead the very thick dough with your hands greased with vegetable oil.

    Do not add all the flour at once. Be guided by the consistency of the finished dough. You may need a little more or less flour. The finished dough is soft and does not stick to your hands. Cover the dough with a towel and place in a warm place to rise. In warm conditions, 1 hour will be enough for this.

    The dough came out well. You can start making the pie. Wrap it with your hands.

    From this dough I made 2 pies, approximately 25-30 cm in diameter. But you can make one large one or, conversely, 4 small ones. Roll out part of the dough into a circle. It is convenient to do this directly on a sheet of parchment.

    Place thick jam (or marmalade) on the dough and spread over the entire surface, slightly short of the edges. Then fold the edges of the dough up.

    Place the remaining dough over the top of the pie. Let the pie sit for 10-15 minutes. Grease with yolk and place in the oven, preheated to 190 degrees for 20-25 minutes.

It turned out very cool and delicious! Although there was no time to let the dough rise a second time, the pie still rose very well in the oven. Completely baked and not burnt. The dough itself turned out airy and soft. Although I’m not a particular fan of flour and I make this kind of pies exclusively for my husband and child, I couldn’t resist this and happily devoured two huge pieces)) Thank you so much for the recipe!
