Homemade yeast-free dough
Yeast-free dough (recipe with photos can be found on the website) can rise when baked just as well as with yeast. This happens due to other processes, for example, the properties of soda or baking powder, slaked soda in vinegar, fermented milk products, due to the air mass of proteins whipped into a strong foam (if they are present in the dish).
You can make dough without yeast in a hundred different ways. In any case, you will need flour (any flour, not just wheat) or its replacement (flakes) plus a second base, which can be:
In fact, two products are enough for a recipe for dough without yeast, the simplest, lean and unleavened. You can use it to bake flatbreads, stick dumplings or dumplings, or make a bread cap for a second course in pots. We get more complex baked goods with the addition of additional ingredients: salt, sugar, eggs, fats (vegetable oil or butter). The mixing process is classic: bulk products are combined, then mixed with wet ones into a single mass. If the dough is stiff, knead it by hand. If liquid, use a mixer or whisk.
An undoubted advantage is that yeast-free dough recipes are more popular among housewives in that they require less cooking time. And it is not necessary to insist on this - after kneading, immediately put it on a baking sheet, frying pan or in a saucepan. It can be stored longer due to the smaller volume of perishable products. And in terms of ease of work and elasticity, the dough is not inferior to any other: it can be molded into various figures, pinched, rolled into thin layers for elegant strudels and rolls.
