Step-by-step preparation
STEP 1
We will need: butter, honey, sugar, egg, flour. And spices for gingerbread. Sometimes they are sold in a mixture. Or you can take them separately. Cinnamon, cardamom, ginger powder. And mix everything together.
STEP 2
Take a saucepan with a thick bottom. Such dishes hold the temperature well and nothing burns in it. Add honey and sugar. We put it on fire. I usually make a double batch, then store the dough in the refrigerator and use as needed.
STEP 3
Melt honey and sugar. In the process add salt and cinnamon. Stir. Keep until the sugar dissolves, do not boil. It will happen quickly.
STEP 4
As soon as the sugar dissolves, immediately add soda. Stir well. The mass will increase in size, keep this in mind.
STEP 5
And add butter in pieces. At the same time, constantly stir the mixture with a whisk.
STEP 6
Let it simmer for about 2 more minutes. You can turn down the fire. I turned it down from 9 to 7. You look at your stove, the heat should be medium.
STEP 7
Remove from heat. I pour the honey batter into the bowl of a high sided mixer. This way it cools faster. And we need to cool it to room temperature. High walls are needed so as not to stain the work surface with flour.
STEP 8
When the dough has cooled, we turn on the mixer and add the egg to the dough, stirring it with the mixer. Beat at medium speed. I have a letter K nozzle.
STEP 9
Continue beating and add flour little by little. Our flour is pre-sifted. Make sure that the flour does not scatter.
STEP 10
Add about 400g of flour, give or take. Then add the dough when it becomes difficult to mix. And with the rest of the flour, knead the dough with your hands. You want it to not stick to your hands. But you don't need to add any more flour. We'll flour the dough like this.
STEP 11
Now we need to wrap the dough in film and put it in the refrigerator overnight. You can cut the dough into pieces. And wrap each one. So convenient when you make a lot of dough. This dough can be stored for a long time in the refrigerator, up to 3 months. Store the finished gingerbread cookies from this dough in an airtight container for up to 1 month. You can simply bake gingerbread cookies for tea. But you can also fill them with glaze, decorate them, make decorations out of them, etc.
