I completely agree with you, strudel is an Austrian dish. I live in Austria, my mother-in-law cooks sweet strudel almost every day. But for some reason they don’t knead the dough on the table, as we are used to doing, but knead it completely in a deep bowl with a spoon. Instead of lemon juice, add lemon zest to the dough; the filling is always apples plus berries and a little imagination :)

I advise you to use a dough rolling machine (the kind sold for making pasta) so as not to have to deal with a huge layer. I cut the dough into small pieces, roll it out in a machine to the desired thickness and length, wrap the filling in each piece of plastic and bake in small portions. it turns out very quickly. much faster than rolling with a rolling pin.

I think this is the best strudel dough recipe! I tried a lot, but this recipe stuck with me. At first I added natural lemon juice, and then began to dilute citric acid with sugar. There is practically no difference. This dough is ideal for apple strudel, because apples and lemon are an irreplaceable combination! Thank you very much to the author for the idea of ​​the test! :)
