Fried kefir pies
The most important thing for preparing this popular dish in Russia is the correct composition of the dough and the correct kneading. It, in turn, can be yeast or yeast-free. Since kefir itself is believed to be an excellent alternative to yeast, it is better to go with the second option.
All recipes for fried kefir pies have almost the same dough composition. Its minimum set is as follows: flour, kefir, soda, salt. In fact, this is the basis of the basics, which can be enriched and diversified to suit your taste. For example, add sugar or beat in an egg. Pour in vegetable oil. Any of the products not included in the base can be replaced with something else.
The dough for kefir pies should be elastic, smooth, and thick in order to roll out well and keep its shape. Pies from it can be formed into any shape: oval, round, open, closed. Place the closed ones in a frying pan with the seam down so that the pie does not accidentally open during the frying process.
Before frying, the oil in the frying pan must be heated to such a state that a drop of dough falling into it immediately becomes golden. And make sure that no water gets on the surface, otherwise everything will start to hiss and splash. The oil should be poured to a height of one to one and a half centimeters. After frying, it is better to place the pies on paper towels, thereby allowing excess fat to be absorbed.
As for the filling, as stated above, it can be anything: sweet, unsweetened, sour, spicy. For it you can take meat, vegetables, fruits, eggs, boiled cereals, herbs, preserves, jam, jam, boiled condensed milk, custard or any other sweet cream, and so on.
