STEP 1

How to make fried apple pies in a frying pan? First, prepare the dough. Prepare your food. Kefir and eggs should be at room temperature, so remove them from the refrigerator in advance. You can use odorless olive or sunflower oil.
STEP 2

In a bowl, combine kefir, eggs and vegetable oil. Beat all products thoroughly with a whisk until smooth. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.
STEP 3

Sift the flour into a separate bowl and mix it with sugar, soda and salt. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking.
STEP 4

Pour the flour mixture into the kefir in parts and knead into an elastic, soft dough. You may need more or less flour. It depends on the quality of the flour itself, the size of the eggs and the consistency of the kefir. At first the dough is very sticky to your hands, but as you knead it becomes less sticky. The finished dough remains a little sticky, but does not stick to your hands. Wrap the prepared dough in cling film or place it in a bag to prevent it from airing.
STEP 5

Meanwhile, prepare the filling. Prepare the products. It is better to take juicy, sweet and sour apples. I used some regular seasonal apples and some Granny Smith apples. It is advisable to take apples with dense, not loose pulp, so that they retain their shape during stewing.
STEP 6

Wash the apples, dry them, remove seeds and peels and cut into small cubes. To prevent the already sliced apples from browning while you are chopping the rest, immediately place them in a bowl and pour lemon juice over them. Add each new batch of chopped apples immediately to the bowl with the remaining apples and stir in the lemon juice.

Add sugar and cinnamon to apples.

Mix everything well.

Place the apple mixture in a frying pan preheated over medium heat, add water and simmer, stirring, for 10-12 minutes. The excess liquid should evaporate, but the apples themselves should remain intact and not boil into the puree.

Transfer the cooked apples to a bowl and cool.

Divide the dough into 12-14 equal parts. Roll each part into a ball.

Roll out the dough ball with a rolling pin into small round or oval cakes. Place 1 tbsp in the middle of the cake. l. apple filling.

Carefully pinch the edges to form an oblong pie. Form all other pies in the same way.

Heat a little vegetable oil in a frying pan. It should completely cover the bottom of the pan. There is a simple way to check whether the oil is hot enough in the frying pan. Dip a wooden spatula into it. If bubbles have gathered around it, then you can begin the frying process. Place the pies and fry over medium heat for about 4-5 minutes until golden brown.
STEP 15

Then turn the pies over to the other side and fry for another 3-4 minutes.

Place the finished pies on a plate with paper towels to absorb excess fat. Serve them hot. Bon appetit!
