STEP 1
How to fry quick pies in a frying pan? First prepare the dough. How to make the dough? Pour room temperature kefir, vegetable oil into a deep bowl, beat in a chicken egg. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Add sugar and salt, baking powder (or soda on the tip of a knife, slaked with vinegar).
STEP 2
Mix the ingredients. Add sifted wheat flour. It is important to sift the flour to saturate it with oxygen. Then the dough will turn out airy and rise well when frying. You may need a little more or less flour to knead the dough, depending on its quality and density. But at the same time, it is important not to fill the dough with flour, so add it in parts, kneading after each portion.
STEP 3
Knead a soft, non-stick dough. Put it in a bag and leave it on the table to rest for half an hour. This must be done so that the gluten in the flour swells and the dough becomes more manageable and elastic.
STEP 4
Meanwhile, prepare the filling for the pies. I have a meat one, made from minced pork and beef. But any other filling to taste is also quite suitable: potato, cabbage, cabbage with mushrooms or rice with egg, green onions with egg. Salt and pepper minced meat, ready-made or made yourself from fresh meat, to taste, add finely chopped onion, pour in a little water for juiciness. Stir the mass.
STEP 5
Place the finished dough on a table dusted with flour, roll it into a thick rope, which is cut into 10 pieces. Roll each piece into a not very thin flat cake, place a little meat filling in the center of each.
STEP 6
Fasten the edges of the pie, you can give it any shape, for example, triangular for variety.
STEP 7
Pour vegetable oil for frying into a frying pan and heat it well. Place the pies on the heated oil, leaving a small space between them. Fry the pies on one side over medium heat for 3-4 minutes.
STEP 8
Then turn the pies over and fry them until golden brown on the second side. Cover the frying pan with a lid and keep them on the fire for about 5 minutes so that the meat filling is well cooked. Remove the finished pies from the frying pan onto a plate lined with a paper napkin so that excess oil is absorbed into it.
STEP 9
Then transfer the pies to a serving dish and serve with tea or coffee. Bon appetit!
