Prepare the dough. Mix kefir with milk, add eggs and whisk, then sugar, salt and soda, mix.

Gradually add flour. You may need a little more or less flour, so first stir in 4 cups of flour and then add flour little by little. The dough will be soft and stick to your hands.

Then pour 3 tablespoons of vegetable oil and knead the dough until smooth.

Cover the dough with a towel or cellophane.

Let's prepare the filling. Finely chop the onion, and you can crush it with a rolling pin to release the juice faster. To make the minced meat juicier, it would be even better to grate part of the onion on a fine grater or chop it in a blender, and chop part of it. (Who prepares the minced meat themselves, then pass the onion along with the meat through a meat grinder)

Mix the minced meat and onion, salt and pepper to taste.

We are preparing belyashi. We tear off a piece of dough, roll it out with our hands and divide it into pieces.

Each piece can be rolled out with a rolling pin or the dough can be kneaded into a flat cake with your hands. Place about half a tablespoon of minced meat in the center.

We form the whitewash. Fold the edge towards the middle.

We take the end and mold it to the folded edge.

And so we sculpt the belyash in a circle, the middle remains open.

Pour enough vegetable oil into the frying pan so that the whites are immersed in it by about half. Heat up and reduce heat to medium. Place the whites face down and fry until golden brown.

Turn it over. To ensure the juiciness of the white meat and quick readiness of the minced meat, it is recommended to pour hot vegetable oil into the open hole of the white meat. I poured a teaspoon of hot broth. Cover with a lid and fry until done.
STEP 15

Place the finished white meat on a napkin or towel to remove excess fat.
STEP 16
