Rooster salad without meat

A salad with a cockerel at the head is a great start to the New Year's feast! In our circle, it is customary to start a feast with cold appetizers and salads.     Prepare the ingredients - boil vegetables, eggs and roots. Peel the onion, garlic, and apple. Drain the marinade from the corn.

    Cut parsley and celery roots, carrots and cucumbers into small cubes. Don't forget to set aside the cucumber pops and a piece of carrot to decorate the salad.

    Add purple onion and eggs in small cubes. One egg remains for decoration. Finely chop and add garlic. Chop and add green onions. Leave some of the onion for decoration.

    Add pickled corn. Save some of the corn for decoration. Prepare the ingredients for the dressing - mayonnaise, honey, mustard, horseradish.

    Mix everything a little in the salad bowl.

    Combine all the ingredients for the dressing, mix them well until smooth and add to the vegetables. And mix everything well.

    Divide the egg lengthwise into two parts, separate the yolk from the white.

    Place the salad on a serving plate or salad bowl to serve, leaving a little for stuffing the protein. Finely grate half the egg white on top. Place a corn ring around the edge of the salad. Place the other half of the egg white on top of the salad.

    Stuff the egg whites with salad. Place cucumber butts on four sides of the dish and place peppercorns on them so that they look like mouse faces.

    Place half the yolk on the stuffed egg white and coat it with mayonnaise.

    Grate the second half of the yolk on a fine grater and sprinkle over the cockerel figurine.
