    To prepare the salad, the most important step is to boil the beets themselves. Until it is ready, it needs to be boiled for about 1-1.5 hours, depending on the size. This time I decided to bake the beets. To do this, rinse each root vegetable under running water with a brush, dry with paper towels, wrap in foil and place in the oven preheated to 180-190°C. Roast the beets for about 50–60 minutes. Then remove it from the oven, unwrap it and cool.

    Peel the cooled beets and rinse in cold water, dry. Then grate each root vegetable on a coarse grater and place in a salad bowl. If desired, you can cut the beets into thin strips or small squares.

    Peel the garlic cloves and pass through a press. You can also chop the garlic on a fine grater or with a knife. Add chopped garlic to the salad bowl with the beets. Select the amount of garlic added to the salad individually, so for some one clove will be too much, for others even five is not enough. Therefore, add one clove first, stir, taste, and add more if necessary.

    Add mayonnaise to the salad. How much mayonnaise should I add? The beet salad turns out juicy and you don’t need to add a lot of mayonnaise. But whatever you like, I’ve seen people who like to top their salad with mayonnaise. In addition, when I add mayonnaise, I no longer add salt to the salad. But if you think the salad is lightly salted, you can add more salt to taste.

I really love simple homemade food like this. This beet salad with garlic and mayonnaise is very good with potatoes, and I also really like adding this salad to sandwiches. I spread curd cheese on the edge, then I put fresh vegetables, in this case a frillis leaf and a fresh cucumber, then a piece of boiled meat, maybe chicken, and at the final stage a beetroot salad. It turns out very satisfying, tasty and not dry; the beets add juiciness to the sandwich.

When I want something quick, tasty and healthy, I always cook beets with garlic and mayonnaise. I cook beets in the microwave, it’s much faster than boiling. I grated the beets on a coarse grater and squeezed the garlic through a press, first removing the core (the taste is milder). 30 minutes and the salad is ready!

I took small cloves of garlic so that the salad would not be too spicy. I had large beets , cooked it for about an hour, then let it cool, peeled it, rinsed it and grated it on a coarse grater.
