Pizza Calzone with smoked sausages and mushrooms

Ingredients
Step-by-step preparation
STEP 1

Set of products.
STEP 2

Chop the basil and add to the sauce. Stir and set aside, let it sit. Let’s make the dough. Pour warm water into a bowl, add salt, sugar and yeast.
STEP 3

Mix. Then add flour.
STEP 4

Knead the dough first with a spoon, then with your hands. Halfway through mixing, add olive oil. No eggs, no milk and kefir!
STEP 5

You can knead the dough in a bowl or on the table. Do not get carried away with flour, otherwise the dough will clog and be hard. It took me exactly 250 g of flour. This is how the dough turned out. Put it in a bowl, cover with a damp cloth and put it in a warm place for an hour.
STEP 6

In the meantime, let's get to the filling. Chop the mushrooms and lightly fry in oil. I never wash champignon and oyster mushrooms, I just wipe them with a damp cloth. Then they turn out fried, not stewed.
STEP 7

Cut the sausages into pieces.
STEP 8

Olives into several parts.
STEP 9

Grate the cheese.
STEP 10

Peel the tomatoes and cut into slices.
STEP 11

Our dough has risen and wants to get out!
STEP 12

Turn on the oven to the maximum (I have 220 degrees). Remove the dough from the bowl, divide it into two parts. Knead each part and roll it into a thin circle.
STEP 13

Spread a thin layer of sauce on one half of the circle.
STEP 14

Then add the filling in layers, starting with the sausages.
STEP 15

mushrooms
STEP 16

olives and tomatoes.
STEP 17

Sprinkle with cheese.
STEP 18

Press the filling well, cover with the other half of the dough and carefully pinch with a pigtail so that our sauce does not leak out and all remains inside.
STEP 19

We place our panties on a baking sheet (I lined it with a baking sheet) and make several cuts.
STEP 20

Grease the top with sauce and place the baking sheet in the heated oven.
STEP 21

No need to proof the pizza! This is another difference from Russian pie. Bake for about 20 minutes until the edges begin to turn golden. The most important thing is not to choke at this time from the mind-blowing smell! :)) Do the same with the second half of the dough.
STEP 22

We put our creation on a large beautiful dish.
STEP 23

We cut it into portions and treat everyone at home with white wine and Italian songs! Good luck with your baking and bon appetit! P.S. If you have a large oven, you can bake both pizzas at the same time.
