    Squeeze a clove of garlic into the mayonnaise and stir. You can also add finely chopped herbs to the sauce.

    Salt the eggs and beat with a fork until smooth. Salt and pepper the meat. Knead it well and divide it into two parts, according to the number of brizols.

    Spread cling film on the board and place a ball of minced meat on it. Cover the meat with film and top. Roll the minced meat into a very thin cake using a rolling pin. Make the diameter according to the size of the frying pan in which you will fry the brizol. I have 24cm.

    Heat a frying pan over medium heat. Pour vegetable oil onto it. Pour in half the egg mixture and spread it like a pancake over the pan. Remove the top film from the meat patty. Transfer the minced meat onto the bottom film and turn it over onto the egg pancake. Remove the film.     Fry the brizol over low heat, covered, until the egg is browned, then turn over to the other side. Cover the pan again with a lid and fry the brizol for about 5 minutes.

    Remove the tortilla to a plate, egg side down. Spread it with mayonnaise. Add chopped tomato and cucumber. Sprinkle everything with cheese.

For breakfast I made brizol from minced meat in a frying pan. I have homemade minced pork. I took a frying pan with a smaller diameter to make it easier to roll out and lay out the minced pancake, but it turned out to be more difficult to roll the finished brizol so that the filling would not fall out. Apparently the optimal size of the frying pan is 24 cm, like the author’s. A smaller diameter is suitable for brizoli without filling. But with the filling it is much more interesting and tastier. Brizol with minced meat in a frying pan is really quick to prepare and not at all difficult. It looks presentable, very tasty, you can cook it for guests. I rolled out the minced meat thinly, up to 2 mm. The pancake turns out to be very elastic, so there are no problems with rolling it into a roll. In a pinch, you can fold it in half. It took 45 minutes to prepare.
