STEP 1

How to bake fish pie with pollock in the oven? Measure out the required ingredients for the dough. Take unscented vegetable oil. Warm the water and milk slightly.
STEP 2

Be sure to sift the flour so that it is enriched with oxygen. Thanks to this, the process of raising the dough will be easier, faster, and the dough will rise better. And the baked goods will turn out magnificent.
STEP 3

In a small bowl, combine the yeast, 1 tsp. sugar and water, mix. Leave the mixture for 10-12 minutes to activate the yeast. This will also allow you to check their quality. A fluffy “cap” should appear on the surface, confirming that the yeast is active and has begun to work. If the “cap” does not form or rises too slowly and weakly, it is better to replace this yeast with another.

The bowl in which the dough will rise must be spacious and voluminous so that the dough does not “run away”. Beat the egg with salt and the rest of the sugar until smooth.

Pour in warm milk, stir lightly.
STEP 6

Add activated yeast, stir.
STEP 7

Pour in vegetable oil, stir again.
STEP 8

Add the sifted flour, but not all at once. You may need more or less flour than indicated in the recipe. Mix the mixture with a spoon.

Add the remaining flour in small parts, while stirring the dough and observing its consistency.
STEP 10

The dough should be soft, pliable, tender, but not sticky to your hands. Form the dough into a log, cover with a towel and leave in a warm place to rise for 60-70 minutes.

While the dough is rising, prepare the pie filling.
STEP 12

Wash the pollock carcasses well, remove the black film from the belly, and dry. Peel the fish, remove the backbone and small bones. Finely chop the pollock fillet. The weight of the cleaned fillet was 350 grams. You can take ready-made fillet.

Peel the onions, wash them, cut them into small cubes.
STEP 14

Cut the pre-peeled carrots into thin strips.
STEP 15

In a frying pan with vegetable oil, fry the vegetables for 5-7 minutes, stirring occasionally.
STEP 16

Place the pollock fillet in a frying pan, add salt, add any spices and seasonings to taste, and stir. Add vegetable oil if necessary.

Fry the fish fillet with vegetables until cooked and cool.
STEP 18

The dough has risen. It increased in volume by 2-2.5 times.
STEP 19

Punch down the dough and place it on a table sprinkled with flour. Divide the dough into three unequal parts: larger for the base of the pie, smaller for the top. I left some dough for decoration.

Roll out most of the dough into a round layer.

Cover the bottom of the baking dish with parchment and grease the sides with vegetable oil. Any heat-resistant form will do: metal, ceramic or glass. I have a mold with a diameter of 22 cm. Transfer the rolled dough into the mold and form the sides.

Place potato slices on the dough.

Place the fish filling on the potato layer.
STEP 24

Roll out a larger part of the dough into a round layer and place it on the filling. Connect the edges of the bottom and top layers of dough well.
STEP 25

Make a hole in the center of the cake to allow steam to escape. From the remaining piece of dough you can cut out various figures and decorate the top of the pie with them. Cover the pan with a towel and leave the cake to proof for 10-15 minutes.
STEP 26

In a small bowl, combine the yolk and milk, stir until smooth.
STEP 27

Brush the top of the pie with the yolk mixture.
STEP 28

Bake the yeast dough pie in an oven preheated to 180 C for 30-35 minutes until golden brown. Set the baking time and mode based on the operating characteristics of your equipment. Cool the finished pie slightly and remove from the mold.
STEP 29

Cut the fish pie with pollock into pieces and serve. Bon appetit!
