It is better to take cottage cheese that is fatty and homogeneous, otherwise there may be cottage cheese inclusions in the finished product. This, of course, will not spoil the taste in any way, but the texture will not be uniform. If you bought granular cottage cheese, rub it through a fine sieve.

    Pour milk into the pan, add cottage cheese and mix everything until smooth. To make a tasty, fatty cheese, the milk should not be store-bought, but natural, from cows. And it must stand in the refrigerator after milking for at least one day in order to ripen.

    Place over medium heat and heat the mixture to a boil. Reduce heat to low and cook until curd curds curd and whey separates, stirring. This took me about 7-10 minutes.

    Remove from heat and pour the mixture onto a sieve filled with gauze folded in several layers. I used a special mylar bag for making cheese. Let the serum drain completely. In order to speed up the process, you can press on the curd mass with a regular spoon.

I used homemade full-fat cottage cheese and homemade full-fat milk. I added 0.5 tsp of salt to this amount of food; the cheese turned out lightly salted. Next time I’ll add 1 teaspoon of salt. But my cottage cheese was grains and I forgot to rub it through a sieve. Therefore (you can see in the photo) there are white specks in the cheese. This does not affect the taste at all, even the type of cheese turned out interesting. Not just yellow, but with specks) But instead of an egg (it didn’t turn out at the right time), I colored the mixture with turmeric. I didn’t add any egg at all, I don’t think the taste was affected much. I added 0.5 tsp of ground turmeric, but you can do less, 2 pinches for example, so that it is less richly yellow, like mine. The taste of the cheese is different from store-bought. Homemade cheese is much more tender, softer and healthier. My cheese did not sit for a day and did not ripen. I stood in the refrigerator for 3 hours and after a while disappeared from the table))) even my child ate the homemade cheese with pleasure!
