STEP 1
How to make a cake without butter and without baking? Prepare the necessary ingredients. Wash dried pears and dates and soak in water for 2 hours. Remove the pits from the dates. Rinse the pumpkin seeds well. Cherries can be used either fresh or frozen. The latter must first be defrosted. Remove seeds from fresh berries.
STEP 2
Pour 100 ml of water into a saucepan and dissolve 1 tablespoon of agar-agar in it. Place the saucepan over low heat and bring to a boil, stirring occasionally. Remove the agar-agar from the heat and leave to cool.
STEP 3
Prepare the bottom layer. Drain the pears and dates and pass them and the pumpkin seeds through a meat grinder fitted with a small hole attachment.
STEP 4
Add honey to the resulting mixture and stir. Then add ground flax to thicken the mixture. Mix everything well again. The dough should be fairly dense and hold its shape.
STEP 5
Spread this mixture evenly into the bottom of a removable cake pan and place in the freezer to set.
STEP 6
Prepare the middle layer. Wash and peel the banana and avocado. Remove the pit from the avocado. Place avocado, bananas, cocoa and honey in a blender bowl and blend until smooth.
STEP 7
The mixture should have a thick, creamy consistency.
STEP 8
Add agar-agar to it, which should have cooled a little. The main thing is that it does not start to freeze. Mix everything quickly and thoroughly by hand or using a blender.
STEP 9
Remove the pan from the freezer and lay out the chocolate-banana layer, smoothing it out carefully and quickly as it will begin to harden fairly quickly. Leave it to harden at room temperature. If this layer has not hardened enough, the mold can be placed in the freezer. Prepare agar-agar for the top layer as in step 2.
STEP 10
Prepare the top layer. Place cherries, avocado and honey in a blender. Whisk all this into a homogeneous mass, if the agar has cooled sufficiently to about 50 degrees, then pour it into the cherry mixture and turn on the blender again. Then remove the mold from the freezer and pour in the resulting puree, quickly and carefully leveling it out. Let the cake harden at room temperature. During this time, decorate the cake to your taste. Then you can put the cake in the freezer for 30 minutes.
