  1. STEP 1

    STEP 1

How to cook Black sesame cake? Preparation will take place in three stages: dough, cream and panna cotta. First of all, let's make shortcrust pastry. Prepare food for him.

  2. STEP 2

    STEP 2

Take a bowl, pour flour, powdered sugar and cocoa into it. Stir until ingredients are evenly combined.

  3. STEP 3

    STEP 3

Place butter into flour. Using a knife, cut the piece into small cubes. And then use your hands to rub the butter and flour mixture into fine crumbs - it will look like kinetic sand - when squeezed, it will form and then crumble.

  4. STEP 4

    STEP 4

Break the egg into crumbs. Again, use your hands to knead it into the dough until it comes together into a ball.

  5. STEP 5

    STEP 5

Place the resulting ball between two sheets of parchment and, with a rolling pin, roll it into a circle slightly larger in diameter than your mold.

  6. STEP 6

    STEP 6

Place the rolled out dough into the pan. I have it round, with a diameter of 28 cm. But the original recipe is designed for a diameter of 32 cm. Use your fingers to form the sides of the pie. Place the pan with the dough in the refrigerator for half an hour.

  7. STEP 7

    STEP 7

Then take out the pan with the dough and place a sheet of parchment on it. Sprinkle some legumes on top - dry peas or beans. This will prevent the dough from swelling when baking. I didn’t have any peas, so I poured pearl barley.

  8. STEP 8

    STEP 8

Bake the cake in an oven preheated to 180°C, top-bottom mode. Bake with the weight on for the first 15 minutes, then remove it along with the paper and bake for another 10 minutes. Remove the finished cake and cool completely.

  9. STEP 9

    STEP 9

Prepare ingredients for sesame cream. If you do not find it on sale, then replace it with poppy seed.

  10. STEP 10

    STEP 10

First of all, whip the cream until thick and put it in the refrigerator.

  11. STEP 11

    STEP 11

Place the sesame seeds in a dry frying pan and fry them for a few minutes until they crackle and have a characteristic aroma. Then grind the sesame seeds in any way - in a blender, mortar or coffee grinder. The finer you grind it, the more uniform and tastier the cream will be. But do not overdo it - the seeds may begin to release oil and you will end up with tahini - sesame paste. We need dry sesame, grind it quickly.

  12. STEP 12

    STEP 12

Mix mascarpone, powdered sugar and ground sesame seeds.

  13. STEP 13

    STEP 13

Take a saucepan and mix milk and agar-agar in it. Place it on the fire and bring the milk to a boil. Boil the milk and agar for two minutes. Agar, unlike gelatin, is not afraid of boiling, but needs it to completely dissolve.

  14. STEP 14

    STEP 14

Remove the hot milk from the heat and add a couple of tablespoons of the mascarpone mixture. Stir. And pour the resulting mixture into the main cheese mass. Mix with a whisk. Cool slightly. Remove the whipped cream from the refrigerator and add to the resulting mixture. Stir. The cream is ready.

  15. STEP 15

    STEP 15

Immediately pour it onto the cooled cake - the agar begins to harden already at 40 degrees. Place the cake with cream in the refrigerator for 2 hours to stabilize.

  16. STEP 16

    STEP 16

After two hours, start preparing the coconut panna cotta. Prepare food for her. Take natural yogurt without flavoring additives.

  17. STEP 17

    STEP 17

Take a saucepan and pour coconut milk and cream into it. Add sugar and agar-agar to them.

  18. STEP 18

    STEP 18

Place the mixture on the fire and cook it after boiling for a couple of minutes. Then remove from heat and cool for 10 minutes. Add yogurt, stir.

  19. STEP 19

    STEP 19

Then I made a small mistake. It was necessary to wait until the panna cotta began to harden and, already thickened, spread it on the cream. I poured more liquid mixture, and it spread not only over the cream, but also over the sides of the pie. Don't repeat my mistakes) Place the pie in the refrigerator for an hour. I left it overnight. The panna cotta froze perfectly, but the cream remained soft. But this did not stop him from being cut in the future.

  20. STEP 20

    STEP 20

For decoration you will need 6 kiwis. I had just enough of them.

  21. STEP 21

    STEP 21

Peel the kiwi and cut into thin slices. The thinner and more accurately you cut them, the more beautiful the pie will be.

  22. STEP 22

    STEP 22

Remove the pie from the refrigerator. Place kiwi slices on top, starting from the edges to the center. Serve the pie chilled.
