What can be considered real, natural yogurt? Yogurt is a fermented milk product that contains two types of bacteria: Bulgarian lactic acid coli and thermophilic streptococcus. Real yogurt contains only milk and the listed bacteria. Bulgaria is considered the birthplace of yogurt. Moreover, yogurt has become something of a national symbol for Bulgarians. Therefore, special attention is paid to the production of yogurt here. Firstly, in Bulgaria you cannot call yoghurt any product that contains anything else besides natural milk and bacteria. For example, in Russia, not natural milk, but powdered milk, as well as various kinds of thickeners, pectin, preservatives and sugar can be added to yoghurt. In Bulgaria, such a product will never be called yogurt. Yogurt is the main component for preparing tarator - the Bulgarian national cold soup. How to make yogurt at home? To make homemade yogurt, you will need a special yogurt starter. This yogurt starter already has all the necessary bacteria. Yogurt starter can be purchased from a store or supermarket. Today, yogurt starter is produced by two companies: Simbiter and Good Food. Next, the yogurt starter is added to the pre-boiled and slightly cooled milk. Yogurt can be kept in a thermos for about ten hours. Among the latest innovations in the food industry are yogurts with new flavors: “Nervous” yogurt - sour milk with pieces of nails. “Student” yogurt - pieces of science granite in a small jar. Eight spoons are included in one jar. “Country Gold” yogurt - there is a layer of oil inside. “Programmer” yogurt - debris from the keyboard is added to each jar.
