It is advisable to choose the neck or flesh. You can take homemade mustard. Rinse the veal in running water, remove the films, carefully cut out the blue veins, otherwise they will twist the meat during baking. Dry with a paper towel.

    Combine classic yogurt of any fat content, but without additives, with soy sauce, salt, ground black pepper and mustard in a deep container. Yogurt can be replaced with low-fat kefir, but it must be fresh, since kefir tastes more sour every day. Since veal is considered a rather dry meat for baking, only a milk drink can make it juicy. Add your favorite spices if desired.

    Place the veal in the sauce and leave in it for 1-1.5 hours, turning over from time to time. You can leave the meat in this sauce overnight. By the way, the longer the meat is marinated in the sauce, the softer and juicier it will be when baked. For shish kebab, veal must be cut into portions and marinated in this sauce.

    After a while, transfer the meat to a baking dish and pour in the sauce. There is no need to add oil - the veal will stew in its own juices and sauce. You can use a pot or container with a lid for baking.

    If there is no lid, then cover the pan with foil and place in a preheated oven at 200 C, bake for about 40-50 minutes. Turn the meat over to the other side from time to time. By the way, if you don’t have a mold at hand, you can place the meat in the sauce in a baking sleeve. Time and temperature are approximate, be guided by the operating characteristics of your oven.

    About 10-15 minutes before the end of cooking, remove the foil, pour the remaining sauce over the meat so that its surface does not dry out and let it brown.
