Bagel with salmon

    I had a fresh salmon steak in the refrigerator. Before starting cooking, I salted the fish, seasoned it with ground pepper and put it in the refrigerator. While the bagels are being prepared, the fish will be salted and ready to eat. For the recipe, you can take purchased chopped lightly salted or smoked salmon.

    In a deep plate, stir dry yeast with warm water (about 50 ml.).

    Add 2 tbsp. sifted flour and 2 tbsp. Sahara. Mix everything well, cover with cling film and leave for 15 minutes.

    Sift flour into a large, deep cup or bowl, add salt, stir. Make a small well in the center of the flour.

    Pour in the yeast and begin to gently knead the dough with a fork.

    Add 200 ml gradually. water and knead the dough.

    If the dough turns out liquid, add a little more flour. Knead the dough for 5-7 minutes. It should be elastic and not stick to your hands.

    Grease a deep bowl to the edges with vegetable or olive oil. Place the dough in it, which you also grease with oil. Cover the bowl with cling film and leave the dough to rise for an hour. It should increase in volume by 1.5-2 times. Place the dough on a floured table and knead for another 3-5 minutes. Divide the dough into equal sized balls.

    If you want larger bagels, make 8-10 balls. I got 17 pieces and the bagels turned out to be the size of a child's fist. Make a hole in the middle of each ball using your fingers. Form into bagels.

    Place the dough on a flat surface sprinkled with flour and cover the bagels with cling film or a light kitchen towel. Leave for 20-30 minutes.

    Place a pan of water on the stove, bring to a boil and add sugar (at the rate of 0.5 tsp of sugar per 1 liter of water). Place the bagels in boiling water and cook on one side for about a minute, then another minute on the other side (make the flame slightly above medium, the water should not gurgle too much).

    Line a baking tray with baking paper and place the bagels at a short distance from each other. Brush them with beaten egg using a silicone brush.

    Place in a preheated oven for 20-25 minutes at 180-200 degrees. The time and temperature may differ from what is indicated in the recipe, depending on your oven and its capabilities. If you are making bagels for the first time, do not go far from the oven and periodically look at the baked goods so that they do not burn.

    Cut the fish into thin slices, onion into half rings, cucumbers into thin circles. Rinse the lettuce leaves and dry.
